Góðgresi - is the name of our project, which we coined as the opposite of “illgresi”, the Icelandic word for weeds (lit. bad plants). By using the word Góðgresi (lit. good plants) for many tasty and powerful herbs that grow naturally all around us, we want to show that many of these “weeds” are actually beneficial. We focus on picking and using such wild herbs and thereby hope to make people interested in engaging and experimenting with their immediate environment.  

In Stöðvarfjörður, a small village in the eastfjords of Iceland, we are developing a skill sharing platform that offers people the chance to participate in different assignments which will be connected to various topics relating to food, art and nature - and Góðgresi is the first step in this process. 

 

Last summer we had the great opportunity of working in an experimental kitchen in a home house and there already developed quite a few Goðgresi-recipes which we would like to share with interested people, in restaurants and on markets around the country. Our concept is that we will publish all of our recipes on the labels of our products as well as on our website (www.godgresi.is), where we also invite everyone to join in and share their experiences.  

To make this project come true we have to invest in the financing of building kitchen facilities which are approved by the health department, packaging (jars, bottles, labeling) and distribution - and therefore we ask for your kind support.

The organization Worldwide Friends (www.wf.is) will support us by contributing volunteers who choose to take part in our project. Their main tasks will be picking herbs and berries and processing the harvest by making products such as syrups, pesto, juices, jams and soups. Furthermore, they will package and label the products and also take care of the market in Stöðvarfjörður. The market plays an important part - here the products will be presented to the public, we draw attention to the gifts of nature and let people value them by offering all our products for free – against donations. We further plan to produce and send products to farmer's markets, e.g. Frú Lauga, so that more people can enjoy them. 

Visiting and working with us grants the possibility of getting to know wild Icelandic nature, hiking in the area around Stöðvarfjörður, practicing cooking skills, enjoying self-made food, working with and meeting locals and tourists.  

Here are some tasty examples of what we will offer: 


-       Kerfill safi or sweet cicely juice is a refreshing drink made from  sweet cicely (lat. Myrrhis odorata), its taste reminds of anise. It is a herb  that has been wrongly cursed a lot in the past, although in fact it is a  powerful and tasty medicinal herb that can be used in many different  ways.      

-       Fardagakál (engl. dock, lat. Rumex longifolius) was first imported to  Iceland in the 19th century and subsequently planted in gardens all  around the island. It grows very early in the summer and is ready in the  days of “fardagar”, the traditional moving days of workers moving from  one farm to another towards the end of may, beginning of june. Today  though, this herb is usually called Njóli, a word that is even used as a  swearword in icelandic. We wish to restore the original and beautiful  name of the plant fardagakál by introducing ways of using it as an  ingredient e.g. in pesto, bread, soups or salads.      

-       Sugar sirups infused with angelica (lat. Angelica archangelica), red  sheep’s sorrel flowers (lat. Rumex acetosella), harebell (lat. Campanula  rotundifolia), birch (lat. Betula) and rhubarb (lat. Rheum rhabarbarum)  create beautiful colors and at the same time add an unique flavour to  drinks and desserts.       

-      One more very tasty fact: in Iceland we live in berryland! We have been  experimenting with different blueberries (lat. Vaccinium) and  crowberries (lat. Empetrum nigrum) but they're simply at their best  straight from the field. We will offer them on markets, both fresh and  juiced.

What are the risks involved in the project? What could cause it to fail?
We need a licensed kitchen to get the products on the market. The options are to upgrade a kitchen into a licensed one, to rent a kitchen or to build one.

Á Stöðvarfirði er verið að þróa vettvang fyrir eins konar kunnáttu dreifingu (e. skill sharing), þar sem við bjóðum fólki að koma, búa til og taka þátt í ýmsum verkefnum sem tengjast náttúrunni á einn eða annan hátt. Góðgresi er fyrsta skrefið í þessu ferli en það verkefni byrjaði síðastliðið sumar. Þá var lögð áhersla á að kynna fyrir fólki hvaða villtu jurtir er hægt að tína og nýta. Þær jurtir sem lögð var áhersla á að tína seinasta sumar eru að öllu jöfnu kallaðar illgresi. Stefnt er að því halda því verkefni áfram í sumar og erum við vegna þess að biðja ykkur um aðstoð.

Bjarki was investigating if he could isolate the moment of the genius by meditation, up to 7 hours long. He tried to feel the moment of the genius running through him and only to take action when the moment felt right. Bjarki has been developing techniques to get the brightest colors from the food in the kitchen, he has been working as a chef from the age of 16. One interesting aspect of the work is that the colors are always changing because of the nature of the material.

Síðasta sumar vorum við með einskonar tilraunaeldhús í heimahúsi þar sem við þróuðum ýmsar uppskriftir en allar eiga þær sameiginlegt að grunnhráefnið voru villtar jurtir. Við erum nú komin með þó nokkrar vörur sem við erum ánægð með og  langar að bjóða til sölu á veitingastöðum og mörkuðum um allt land. Markmiðið er að gera fólki kleift að nýta sitt nánasta umhverfi sjálft. Hægt verður að nálgast allar uppskriftir af vörunum á heimasíðu okkar (www.godgresi.is). Einnig ætlum við að bjóða fólki að heimsækja okkur á Stöðvarfjörð og taka virkan þátt í ferlinu á ýmsan hátt; svo sem tínslunni, framleiðslunni eða bara þeim verkefnum sem eru tilfallandi á hverjum tímapunkti. Nú erum við komin í samstarf við sjálfboðaliðasamtökin Veraldarvini og ætla þau að liðsinna okkur með því að senda sjálfboðaliða sem munu taka þátt í þessu verkefni með okkur.

Síðasta sumar vorum við með einskonar farandmarkað á Stöðvafirði og bæjunum í kring. Þar buðum við upp á allar okkar vörur gegn frjálsum framlögum, þ.e. ekkert verð var fyrir hverja vöru en gat fólk verðlagt vöruna eins og það vildi. Markmið okkar fyrir sumarið er að halda áfram að vera með markað auk þess sem okkur langar einnig að koma vörunum á fleiri markaði eins og til dæmis Frú Laugu í Reykjavík. Til þess að það markmið verði að veruleika þurfum við að koma upp löggildu eldhúsi og erum við að vinna að því á Stöðvarfirði. 

Þróunarstarfsemi  á okkar vörum mun halda áfram í sumar en erum við nú þegar komin með nokkrar vörur sem tilbúnar eru til framleiðslu. 

Hér að neðan segjum við frá nokkrum þeirra.

-     Kerfilsafi: er svaladrykkur sem er gerður úr spánarkerfli. Spánarkerfill (lat. Myrrhis odorata) er planta sem margir hafa litið hornauga undanfarin ár en er í raun einstaklega bragðgóð og talin kröftug lækningajurt sem gaman væri að fá fólk á Íslandi til að nýta sér í auknu mæli.  

-     Fardagsmauk er unnið úr fardagakáli (lat. Rumex longifolius) en það var flutt til Íslands í kringum 1800 og ræktuð í görðum landans.  Fékk það nafn sitt vegna þess hversu snemma það óx á sumrin og var tilbúið til átu fyrir fardaga.  Fardagar voru búflutningsdagar Íslendinga hér áður fyrr en þeir voru um mánaðarmótin maí og júní. Í dag er þessi jurt yfirleitt kölluð njóli og hefur það nafn jafnvel verið notað sem smánaryrði en okkur langar að endurvekja hið fallega og upprunlega nafn plöntunnar.

-     Ber eins og bláber (lat. Vaccinium) og krækibær (lat. Empetrum nigrum) hafa einnig verið vinsæl og höfum við verið að gera ýmsar tilraunir með þau en berin eru bara einfaldlega best beint af lynginu. Höfum við því verið að selja þau á mörköðum, bæði heil og saft úr þeim.

-     Sykursíróp sem bragðbætt eru með ýmsum villtum jurtum, s.s. hvönn (lat. Angelica archangelica), blöndustrokkum (hundasúrufræjum, lat. Rumex acetosella), bláklukkum (lat. Campanula rotundifolia), birki (lat. Betula) og rabarbara(lat. Rheum rhabarbarum). Sykursírópið var mjög vinsælt seinasta sumar en vinsældir þess voru ekki einungis vegna framandi bragðs heldur þóttu litirnir einstaklega fallegir.

Með því að styrkja okkur gerir þú okkur kleift að koma upp löggildu eldhúsi sem er grunvöllurinn fyrir því að við getum sett þessar vörur á markað. Margt smátt gerir eitt stórt en þetta fallega máltak á vel við í þessu tilfelli.

Bróðurpart sumars verðum við á Stöðvarfirði og er öllum velkomið að koma við hjá okkur. Þar eru bæði tjaldsvæði og gistihús og fögnum við öllum þeim sem hafa áhuga á að fræðast um góðgresi sem vex þar allt um kring.
