Kristberg Kristbergsson

Kristberg Kristbergsson is Professor Emeritus of Food Processing and Technology at the Faculty of Food Science and Nutrition at the University of Iceland. He has a BS (1979) in Food Science from the Department of Chemistry at the University of Iceland after which he studied at Rutgers University in New Jersey in the US where he earned his MS (1982), M. Phil (1982) and PhD (1984), in Food Science.

His most recent research interest are focused on: (i) Design and optimization of delivery systems for bioactive ingredients to increase (ii) extraction and activity of bioactive components from marine resources using novel technologies, (iii) effect of the Physico-chemical properties of chitin and chitosan.

After his PhD he joined Nabisco Brands Inc in New Jersey where he worked on food product development and extrusion research until he was appointed Associate Professor at the Department of Chemistry at the University of Iceland in 1989 where he served as Chair 1991-1993. In 1995 he participated in forming the department of Food Science and served as Chair 1998 and 2004-2006.

He has been a visiting professor or scientist at the Norwegian Research Institute Matforsk (1995), Oregon State University in the US (1998) and (2000), The Danish Institute of Fisheries Research (DIFFERS) and DTU (2006), the University of Queensland, Australia (2009) and University of Hohenheim in Stuttgart Germany (2009).

He has participated in and coordinated numerous national and international research projects.

He was the Series Editor for the first 13 volumes of of the ISEKI Food Series published by Springer.

He is co-founder of TARAMAR SEEDS EHF and serves as Director of R&D
