WHY?
Most of us are interested in leading a healthy lifestyle, and we do our best to eat healthy, knowing that good nutrition is the largest factor in maintaining good health.

Being a staple in large parts of the world and one of the oldest man-made foods, bread plays a huge role in our everyday diet. For the past couple of years, however, its wholesomeness has been called into doubt, leading many people to eliminate it from their diet. By using first-rate ingredients in the age-old process of sourdough bread-making, I want to join the team of bakers who are working to gain back the reputation that bread deserves.

HOW?
Flour – water – salt.
Using simple, but high-quality ingredients, I want to come as close as I can to the French country-style bread-baking tradition by making sourdough bread, known for its high nutritional value and exceptional taste. Baking such bread in a wood-fired oven greatly improves its flavor and substantially lengthens its shelf life.

The fund-raising drive revolves around the stone oven, which will be built at my home, Böggvisstaðir, in Svarfaðardalur valley, North Iceland, with the help of an expert stone oven builder from France. In this oven, I will bake sourdough bread, made of organic wheat, also imported from France.

I have already imported a special stone-mill, known for the quality of the flour it makes. Only freshly ground, organically grown wheat, without
additives, will be used for making the bread. Using freshly ground wheat ensures that all beneficial minerals and vitamins, known to diminish with storage, are preserved.

The farmer, from whom I purchase the wheat, cultivates ancient varieties of wheat - also called "heritage wheat"- which produce a grain richer in nutrients and more easily digested than do modern varieties. Therefore, sourdough bread, made with this kind of grain, has been well received among people with gluten intolerance.

WHO?
My name is Mathias. I am a singer by education and hold a master’s degree in medieval music performance. Originally from France, I've been living in Iceland for five years. I'm married to a beautiful Icelandic woman (who brought me here !) and we now have a son, who will soon be a year old.
A few years ago, my interest in making sourdough bread was kindled —an interest that quickly turned into passion— and ever since, I've been baking sourdough bread for my family with the same great pleasure.

Last year, I decided to take this passion further on and went back to France for a few months to acquire training as a baker. Subsequently, the idea to open my own sourdough bakery began taking shape.

A project to remodel and add on to our house will be financed with a lone and done directly after the oven is finished, but I need your help in completing the financing of building the oven itself, which costs ISK 3 million. Although I will bear the expense for part of it, your help is essential in making this community project a reality.
An oven of this kind is strong and survives the test of time. It will benefit many, in terms of better nutrition and health, hopefully also after I’m gone and a new generation has taken over.
